Salt Lake City is a genuinely different gateway to these two parks than the far more common Las Vegas route, and the driving geography reflects that. Bryce Canyon sits roughly four hours south of Salt Lake City, while Zion is closer to five hours by road — real distance through central and southern Utah rather than the shorter Las Vegas-to-Zion run.
The two parks themselves are only about 84 miles apart, connected by US-89 and Utah's Scenic Byway 12 in under two hours — short enough that visiting both from Salt Lake City in one day is realistic, even though it means a genuinely long day overall once the drive back is factored in.
Because of where it sits on the route south, Bryce Canyon is typically the park reached first from Salt Lake City, with Zion following — a logical order given the roads involved, rather than an arbitrary routing choice.
The honest tradeoff of departing from Salt Lake City rather than Las Vegas is more time in the vehicle — but for travelers already based in Utah's capital, it avoids an extra flight or drive to Nevada just to reach two parks that are, geographically, part of the same state.
