The Spanish Riding School, which the tour passes on its way through the Hofburg, is the oldest institution of its kind in the world still practicing classical "haute école" horsemanship exactly as it was performed in the Renaissance. Its founding is conventionally dated to 1565, the year the Stallburg was built; the famous white Lipizzaner horses, whose breeding program began at the Imperial Stud in Lipica in 1580, perform today in the Winter Riding Hall built under Emperor Charles VI between 1729 and 1735. In 2010, UNESCO recognised the school's horsemanship as Intangible Cultural Heritage, and the knowledge of Lipizzaner breeding itself was added to the same UNESCO list in 2022.
The cake stop has its own real, slightly dramatic history. In 1832, a 16-year-old apprentice cook named Franz Sacher was asked to improvise a dessert for Prince Klemens von Metternich after the head chef fell ill — the result, a dense chocolate sponge layered with apricot jam under a dark chocolate glaze, became the Sachertorte. His son Eduard later opened the Hotel Sacher in 1876, and the cake became such a point of pride that Hotel Sacher and the rival Café Demel fought over the right to call their version the "original" — a dispute only settled by a 1965 court ruling in Hotel Sacher's favour.
For families, the format is built around actually keeping kids engaged rather than just covering ground: a real cake tasting, a look at the genuine horses and riding tradition rather than just a photo of the building's exterior, and a pace that leaves room to stop when something catches a child's attention — the real advantage of a private tour over a fixed group itinerary.
