Cicchetti go back to the 13th century, when Venetian workers, merchants, and gondoliers needed something quick to eat during the day without stopping for a full sit-down meal. Bacari — small neighborhood wine bars — started serving bite-sized dishes alongside a glass of wine to meet exactly that need, and the habit of moving from one bacaro to the next sampling different specialties, known locally as "andar per bacari," is still how a lot of Venetians eat lunch to this day.
The Spritz, almost always one of the tastings on a tour like this, has a more recent and more specific origin: it started in the late 19th century, when Austrian soldiers stationed in the Veneto found local wine too strong and asked bartenders to "spritzen" — splash — it with soda water to cut the alcohol. The modern version, with Prosecco and a bitter aperitivo added in, only came together around the 1950s, decades after the name itself was coined.
With 6 or 10 tastings to choose from, this private tour moves at whatever pace suits your appetite, with your host steering you toward specific bacari and hole-in-the-wall spots rather than a generic highlight reel aimed at passing visitors with little time and even less local knowledge.
