The Community of Madrid has a genuine, centuries-old winemaking tradition that most visitors never associate with the capital — vineyards along the Manzanares, Jarama, and Tajuña river valleys southeast of the city date back roughly 900 years, long before the modern Vinos de Madrid Denominación de Origen was formally established in 1990. In several of the small historic wine towns in this area, producers still use underground cellars lined with traditional large clay vessels called tinajas, a storage method that predates modern stainless steel by centuries, and a small number still practice 'sobremadre,' a traditional style fermented and aged in contact with the grape skins that produces a naturally light effervescence.
Carabaña, the town at the center of this excursion, has its own well-documented history outside of wine: its mineral spring has been known since Roman times, and its water was commercially bottled from 1883 onward after 19th-century chemical analysis confirmed its high mineral-salt content and genuine laxative properties. The spa and bottling operation became well known across Spain under brands like 'Sales de Frutas Carabaña,' and the site was formally declared of public utility in 1928 — a real, documented piece of regional history that long predates its current role as a stop on a wine-and-countryside day trip.
The rest of the day — the 4x4 drive through the valley, the countryside lunch beside a river and waterfall — is intentionally unstructured and personal rather than built around a single named landmark, which is exactly the kind of off-the-beaten-path experience that's hard to arrange without a local host.
