Tacos El Franc began as a street cart founded by Javier Valadez in 1974 and opened a brick-and-mortar location in 1996. It has been featured in the Michelin Guide, appeared on Netflix's Taco Chronicles, and opened its first U.S. locations in 2025.
Mercado Hidalgo is one of Tijuana's historic public markets, where produce, spices and prepared food show everyday Tijuana eating beyond tourist streets. The Caesar salad is credited to Caesar Cardini in Tijuana in 1924, a reminder the city's food story is not only tacos.
