Berrima, one of this tour's genuine historic stops, is recognised as the best-preserved Georgian-era village on mainland Australia. Surveyed in 1829 by Major Thomas Mitchell and formally laid out in 1831, it grew through the 1830s to 1860s on the strength of its position on the main road south from Sydney — including Australia's oldest surviving gaol, built by convict labour from 1835 and opened in 1839 — before the railway bypassed the town in 1867 and effectively froze its growth, which is exactly why so much of its original Georgian character survives intact today.
The Southern Highlands is also a genuine cool-climate wine region, with vineyards planted up to 900 metres above sea level around towns including Bowral, Mittagong, Moss Vale and Berrima, now home to more than 60 vineyards. Early 19th-century attempts at winemaking here largely failed without the right cool-climate expertise, and serious cool-climate viticulture only took hold again from the 1980s onward; Bendooley Estate, one of this tour's stops, is part of that modern regional revival, now known chiefly for Pinot Noir, Chardonnay, Sauvignon Blanc and Riesling.
Fitzroy Falls, further into the itinerary, is a real waterfall dropping roughly 82 metres into the Yarrunga Valley within Morton National Park — a dramatic natural counterpoint to the historic villages and vineyards that make up the rest of the day.
