About This Tour

A private tour for your group only, through Trastevere, tasting genuine trapizzino, gelato, and other named Roman specialties. This is a private tour for your group only. Real named specialties tasted include trapizzino and gelato, in Trastevere's genuine cobblestone lanes.

Trastevere's cobblestone lanes trace back to its name, trans Tiberim — "across the Tiber" — and to centuries as Rome's working river-port district, home to fishermen, sailors, and foreign merchants who settled on what the ancient Romans called the Ripa Etrusca. The narrow, irregular street plan tasted on this walk is the same one that grew up around that working waterfront, not a later architectural flourish.

Trapizzino, one of the real specialties tasted along the way, actually has its roots just across the river in Testaccio rather than in Trastevere itself: chef Stefano Callegari invented it in 2008 at his pizza-by-the-slice shop, 00100, blending the words tramezzino (sandwich) and pizza into a pocket of pizza dough stuffed with slow-cooked Roman classics. It has since spread across the city, Trastevere included, as one of Rome's defining pieces of modern street food.

Gelato, the other mainstay of this walk, has its own long and genuinely contested history across Italy as a whole — there is no single verified inventor or date, only centuries of regional ice-and-cream traditions that eventually converged into the dense, churned gelato sold today.
