About This Tour

A private tour for your group only, combining genuine Roman aperitivo culture with real Vatican views. This is a private tour for your group only. Real aperitivo drinks and food are enjoyed with genuine Vatican views.

Aperitivo takes its name from the Latin aperire, "to open" — the idea of a drink meant to open the appetite before dinner rather than close out the evening. The custom's roots trace to Turin, where Sunday farming families once shared a late-afternoon spread of wine and small dishes called merenda sinoira, and city cafés later began serving food alongside drinks so that female customers wouldn't be seen drinking on an empty stomach.

Two of the drinks most associated with aperitivo today were born in that same corner of Piedmont: vermouth, created in Turin in 1786 by the apothecary Antonio Benedetto Carpano, and Campari, whose bitter recipe Gaspare Campari settled on by 1860. The ritual spread south over the following century until it became as Roman as it is Piedmontese.

Taking it in with a real Vatican skyline as the backdrop adds a distinctly Roman frame to a tradition that, strictly speaking, started several hundred kilometers to the north.
