Querétaro is Mexico's main producer of sparkling wine. Vines were planted in the region as early as 1531, but the modern industry is young: Freixenet Mexico began making sparkling wine here in 1986, and many of the state's 50-plus wineries opened within the last two decades. Because the name Cava cannot be used in Mexico, the wines are labelled vino espumoso.
Vineyards here are planted high, roughly 6,200 to 7,000 feet above sea level, on calcium-rich clay soils, and growers use grapes such as macabeo, xarel-lo and parellada familiar from Spanish Cava country. The wine-and-cheese festival in nearby Tequisquiapan is one of the state's best-known events.
The monolith at Bernal is a volcanic dacite plug. It is often called the world's third-largest, though a later study argued it is taller than that ranking implies.
