San Sebastián del Oeste's history as a town predates Mexican independence by two centuries: Spanish prospectors founded it on January 20, 1605, after striking gold, silver, and lead deposits in the surrounding Sierra Madre. By 1785, more than two dozen mines and a number of ore foundries were operating around the settlement, and the town was formally incorporated as a city in 1812. Its population peaked at roughly 20,000 around 1900 before the upheaval of the Mexican Revolution sent the mining economy into a long decline — the quiet, much smaller town you find today is a direct legacy of that collapse, not its original scale.
Mexico's federal tourism ministry named San Sebastián del Oeste a Pueblo Mágico in 2011, recognizing a historic center that was never rebuilt over — the main plaza dates to 1774, and colonial-era buildings like Hacienda Jalisco, now partly a small museum, still stand from the town's mining heyday. Sitting at roughly 950 meters elevation, well above Puerto Vallarta's sea-level coast, the town runs noticeably cooler year-round (averaging around 20°C), which is also what makes highland coffee cultivation viable in the surrounding hills.
That elevation and climate support the family-run coffee plantation on this tour's itinerary — Jalisco's own coffee country sits in this same band of Sierra Madre highlands, distinct from Mexico's much larger coffee regions farther south but genuinely productive at this altitude. The day's tequila distillery stop is a separate, smaller regional operation rather than one of the historic Tequila-town producers; for a trip built specifically around that town's UNESCO-listed agave landscape and its oldest distilleries, Voyzo's dedicated Tequila Magic Town day trip covers that ground instead.
