Mezcal and tequila are often treated as interchangeable, but they're genuinely different categories of agave spirit. Tequila can legally only be made from one agave variety, blue Weber agave, and only in five designated regions of Mexico, with almost all production concentrated in Jalisco. Mezcal is the broader category: it can be made from more than 30 different agave varieties across nine Mexican states — Oaxaca dominates, producing an estimated 85% of all mezcal, but Puebla is genuinely one of the other recognized mezcal-producing states, alongside places like Guerrero, Durango, and Zacatecas, even if its tradition is smaller and far less internationally famous than Oaxaca's. Every tequila is technically a type of mezcal; not every mezcal is tequila.
The production method is where the real difference in flavor comes from. Tequila is typically made industrially, with agave hearts steamed in ovens before being distilled in copper or steel equipment. Mezcal, by contrast, is still largely made using older, artisanal methods: agave roasted — not steamed — in underground stone-lined pits, crushed by hand or with a stone wheel, fermented in wooden vats, and sometimes distilled in clay stills. It's that roasting step specifically that gives mezcal its characteristic smokiness. At Mezcal Factory El Amate, this tour covers that real process directly, from agave selection through distillation, finishing with a guided tasting across different mezcal profiles.
Pairing the distillery with Atlixco rounds out the day with a different side of Puebla state. Atlixco is an officially designated Pueblo Mágico, a title Mexico's federal tourism program only grants to towns with genuine, verified cultural and historical assets, and it's locally known for its flower-growing industry and colonial-era architecture. Together, an artisanal spirit few visitors associate with Puebla and a town built around agriculture and colonial history give a different, less-touristed picture of the state than Cholula's pyramid alone.
