Bodega Salentein's name has nothing to do with Mendoza — it comes from a 17th-century castle in the Netherlands that serves as the headquarters of Pon Holdings, the Dutch conglomerate behind the winery. Dutch entrepreneur Mijndert Pon first visited Mendoza's Uco Valley in 1995, recognized the altitude and terrain's potential for serious wine, and founded Salentein the following year — becoming the first producer to plant vines in the valley's San Pablo territory. Rather than selling off grapes, as was common at the time, Pon set out to grow, make, and bottle the wine entirely at its point of origin, an approach that was unusual in Mendoza in the mid-1990s.
The estate's underground cellar is built around a genuine gravity-flow system, letting wine move between levels without pumping, and it's paired with an underground tasting room carved into the same subterranean structure. Above ground, the Killka Gallery holds a permanent collection pairing 19th- and 20th-century Dutch painters with contemporary Argentine artists — a direct expression of the winery's two-country identity — alongside two restaurants and a small chapel on the property.
From Salentein's underground world, the day shifts pace at Bodega La Azul for a relaxed lunch of regional dishes, served with Andes views and paired with wine rather than rushed between tasting stops — a genuinely different rhythm from the tour's earlier, more structured cellar visit.
