The East End's bagel tradition traces directly to the Jewish immigrant community that settled in Spitalfields and Whitechapel from the late 19th century onward, at its peak numbering roughly 200,000 people in the area. Brick Lane's Beigel Shop traces its roots to 1855, when it was founded by Russian Jewish immigrants, making it one of the oldest bagel bakeries anywhere in Britain — while its near-identical neighbor two doors down, Beigel Bake, opened more recently in 1974 and now turns out more than 7,000 bagels a day from a 24-hour bakery that never really closes.
The spelling "beigel" over "bagel" isn't an accident either — the shop deliberately adopted it in 2002 as a nod back to the word's Yiddish roots, a small but genuine piece of linguistic history still visible on the shopfront sign today.
Fish and chips, the tour's other anchor dish, has its own working-class East London lineage, emerging in the mid-19th century as a cheap, filling meal for dockworkers and factory labourers — a food tradition every bit as rooted in this specific stretch of London as the bagel is.
