Portuguese food culture runs deep, and a handful of the dishes and drinks on this tasting tell real stories about the country's history. Bacalhau — dried, salted codfish — has been a staple here since Portuguese fishing fleets began working distant Atlantic waters centuries ago, and it remains so central to the national diet that it's often said there's a different bacalhau recipe for every day of the year.
Ginjinha, the sour-cherry liqueur included in this tasting, is a genuinely local Lisbon tradition rather than a national one — it's most closely associated with small, often standing-room-only bars clustered around Rossio Square in the Baixa district, where it's traditionally served in a small glass, sometimes with a cherry dropped into it. Port wine, Portugal's best-known fortified wine, is produced from grapes grown along the Douro River in the country's north, but it has long been shipped out through Portuguese ports and poured in Lisbon as a matter of course.
Tasting these alongside cured meats and cheese while riding through Lisbon's old town, rather than at a single restaurant table, means the food is paired directly with the neighborhoods that shaped it — the narrow medieval lanes of Alfama and the grid-planned streets of the Pombaline Baixa, rebuilt after the devastating 1755 earthquake.
