La Fortaleza traces its roots to 1873, when Don Cenobio Sauza founded the family's first distillery, La Perseverancia, in Tequila, Jalisco. The family business was revived in 2000 and the early bottlings were sold under the name Los Abuelos, meaning the grandfathers, as a nod to traditional methods.
Production here follows those older methods: agave is cooked in stone or brick ovens and crushed with a traditional tahona, the stone wheel mill, rather than a modern shredder. Seeing that equipment working explains why traditional tequilas taste different from industrial ones.
The stop at Tequila Selecto and the walk through the Pueblo Mágico let you compare a heritage distillery with a small artisan factory in the same day.
