The cantucci on your tasting list trace back to a specific bakery: Antonio Mattei opened his shop in nearby Prato in 1858, working from an 18th-century almond-biscuit recipe he'd received from two visiting nuns. His biscotti won a medal at Florence's own Italian Exposition in 1862, then more awards in Turin and at the 1867 Paris Universal Exhibition — the same five-ingredient recipe, more or less, still used today.
If Chianti wine is part of your tastings, you'll likely hear the story behind the black rooster you see on so many bottle necks. It's a real emblem dating to the 14th-century Lega del Chianti, a Florentine militia set up to control the territory — though the popular tale of a starved black rooster crowing early to win Florence a larger share of Chianti from Siena is a medieval legend, not documented history, however good a story it makes over a glass.
What a private tasting adds that a shared food tour usually can't is time — time to ask the baker or the market stallholder a follow-up question, linger over a pour, or skip ahead if six tastings start to feel like plenty before you reach ten.
