Fiesole was already a major hilltop settlement, known to the Etruscans as Vipsul or Visul and later Latinized to Faesulae, by around the 8th century BC, making it older than Florence itself, which grew up later in the valley below. Rome conquered the Etruscan town in 90 BC after a lengthy siege, and once the site was reoccupied as a Roman town, builders added a theater carved directly into the natural rock of one of Fiesole's hills, likely in the 1st century BC.
That theater, rediscovered and excavated in the 19th century, survives in remarkably good condition — its stone seating, or cavea, still holds roughly 3,000 people today for the Estate Fiesolana summer concert series, making it one of the rare ancient Roman theaters still in cultural use nearly two thousand years after it was built.
The rest of the day moves from that ancient layer to a more recent one: a climb to the Convent of San Francesco for panoramic views over the Arno valley, then a stop at the historic Fattoria di Maiano estate for a taste of the olive oil and wine actually produced on Tuscan hillsides like these.
