Single malt Scotch starts with malted barley, which is mashed with hot water to release its sugars, fermented with yeast into a beer-like liquid called wash, and then distilled — usually twice — in the distinctive copper pot stills that give each distillery its own character. What comes off the still is clear and fiery; it's the years spent afterward maturing in oak casks, by Scotch whisky law a minimum of three, that give single malt its colour, depth, and the specific character tasted at each real distillery this tour visits.
The day's standout stop is the Scotch Malt Whisky Society, founded in 1983 by a small group of friends — among them tax accountant Philip "Pip" Hills, who had been struck by how different whisky tasted drawn straight from the cask in the Highlands compared with the bottled version most people knew. That same year, the Society took over part of the Vaults in Leith — vaulted cellars thought to predate the year 1200, with an extra storey added as late as 1785 — and released its first single-cask bottling that August, a 1975 sherry-cask Glenfarclas. The Society still bottles whisky this way: single casks, at cask strength, identified only by a numeric code and tasting notes rather than a brand name.
A full 7-9 hour private day gives real time to see both sides of Scotch whisky in one trip — the working production floor of two genuine single-malt distilleries, and the very different, more connoisseur-focused culture of a members'-style tasting institution housed in some of the oldest cellars in Leith.
