Leith was Edinburgh's own independent port for centuries before formally merging with the city in 1920 — a merger Leithers themselves voted against by more than five to one at the time. Even after amalgamation, Leith's docks remained one of Edinburgh's great economic engines, and its bonded warehouses became central to the Scotch whisky trade from the 1870s onward, when empty wine-storage buildings were repurposed to mature whisky duty-free. By the 1960s, roughly 85% of all the whisky maturing in Scotland was sitting in close to ninety warehouses in Leith alone — a genuinely remarkable concentration for one stretch of waterfront, though the last of those bonds finally closed in 1995.
The Scottish beef tasted on this tour very likely traces back to Aberdeen Angus cattle, a breed developed in the early 19th century from the native black, naturally hornless cattle of Aberdeenshire and Angus. Pioneering breeders like Hugh Watson and William McCombie fixed the breed's modern type in this period, and it's since become one of the most widely used beef breeds in the world — a genuine Scottish export success story that long predates the whisky industry it's often paired with today.
Whisky-smoked salmon brings those two threads together directly: Scotland's smoking traditions and its whisky-cask maturation both rely on similarly careful control of wood, smoke, and time, and pairing the two is a distinctly Scottish — rather than generic Scandinavian-style — way of serving the fish. Covering both Old Town and Leith in one private tour gives real contrast between the city's medieval hilltop core and its very different, working port history just down the hill.
