About This Tour

A private tour for your group only, real stops at retro confectioneries, a strudel shop, and a genuine chimney cake (kürtőskalács) stop. This is a private tour for your group only. Real stops include retro confectioneries, a strudel shop, and genuine kürtőskalács — Hungarian chimney cake.

Kürtőskalács, the hollow spit-roasted pastry better known as chimney cake, traces back to Székely Land, a Hungarian-speaking corner of Transylvania (now part of Romania) — one of the earliest written recipes appears in a cookbook compiled by Countess Mária Mikes of Zabola in 1784. Local legend pushes the story back further still, to 1241, when Székely women are said to have baked hollow loaves on spits to trick Mongol invaders into believing the village had food to spare.

The name itself describes the cake: kürtő means 'chimney' or 'stovepipe,' and kalács is a sweet bread, a fitting label for a tubular pastry with steam curling from its hollow core as it comes off the spit. Hungary formally registered kürtőskalács as a protected Hungaricum on December 3, 2015, though Romania, Slovakia, Germany, and Poland all have their own versions and their own claims on it.

Set against that is Budapest's other great sweet tradition — its old-school cukrászda confectioneries, many of them retro survivors of a once much larger café culture, where the pastries are refined and plated rather than handed to you warm off a spit. Moving between a genuine chimney-cake stall and a classic confectionery on this private tour is a good way to feel that contrast for yourself.
