Egri Bikavér, or Bull's Blood, is a blended red wine unique to Eger, made from at least three grape varieties chosen from a set list that includes Kadarka, Kékfrankos, Cabernet Sauvignon, and several others. The exact origin of the name is genuinely unclear — the word 'Bikavér' shows up in written records as early as the start of the 19th century, describing a deep-colored, powerful red wine, but no one has pinned down precisely when or why the term first appeared.
The popular legend is far more dramatic than the real history: that during the 1552 Ottoman siege of Eger Castle, captain István Dobó's roughly 2,000 defenders held off some 150,000 Turkish troops partly because red wine, carried up to soldiers on the walls, stained their beards and convinced the attackers they'd been drinking bull's blood for strength. It's a great story, but historians are clear that it isn't actually true — the wine's real documented history begins somewhat later than the siege itself.
Tasting Bull's Blood in the Valley of the Beautiful Women, right outside Eger, after walking the real Eger Castle and the Cathedral Basilica, is the honest way to experience this wine: on its own considerable merits, not on the back of a legend that doesn't quite hold up.
