Penedès isn't just "a wine region near Barcelona" — it's genuinely the heart of Spanish Cava production, with roughly 95% of all Cava made within this one area, much of it concentrated around the town of Sant Sadurní d'Anoia, home to several of Catalonia's largest producing houses.
The connection to Champagne is real, not a marketing comparison: in 1872, winemaker Josep Raventós Fatjó travelled to France to study the méthode champenoise and brought the technique home to Penedès, where it became known locally as "Xampany" before the name "Cava" was first used, in 1928, by the Mestres winery. Spanish law still requires genuine Cava to be made the same way — a true second fermentation inside the bottle, with a minimum of nine months' ageing before release — which is exactly what separates real Cava from the broader category of Spanish sparkling wine, or vino espumoso.
Cava earned its own Denominación de Origen in 1991, distinct from the wider Penedès regional DO, and it's typically built from three native Catalan grapes — Macabeo, Parellada, and Xarel·lo — each playing a different role in the final blend. Tasting your way through four real wines and four real Cavas at two named wineries is as close as a single afternoon gets to understanding why this particular corner of Catalonia, and not somewhere else in Spain, became the country's sparkling-wine capital.
