Greek food is harder to sum up as a handful of signature dishes than most cuisines, because so much of it is built around taverna culture rather than formal restaurant dining — small, often family-run places where food arrives as a string of shared plates, or mezedes, meant to be picked at slowly over hours of conversation rather than eaten as a single quick course. A tasting-style route through real neighborhood tavernas is really a tour through that social habit as much as the food itself.
In 2010, UNESCO inscribed the Mediterranean diet — the everyday pattern of eating built around olive oil, vegetables, legumes, grains, and modest portions of meat and dairy that both Greek home cooking and taverna menus draw from — onto its Representative List of the Intangible Cultural Heritage of Humanity, a joint nomination by Greece, Italy, Spain, and Morocco that was later expanded to include Cyprus, Croatia, and Portugal. It's one of the few times a whole country's everyday eating habits, rather than a single dish or recipe, has been formally recognized this way.
A tasting route through local tavernas and hidden spots typically touches the staples that define Greek cooking at this level — tzatziki (strained yogurt with cucumber and garlic), dolmades (vine leaves rolled around rice, sometimes with meat), grilled souvlaki, and regional cheeses and olives among them — though the exact stops and dishes depend on what's fresh and what the guide knows that day, which is part of the point of going local rather than following a fixed restaurant list.
