Arequipa's historic centre was inscribed as a UNESCO World Heritage Site in 2000, and what the inscription protects is largely the way European and Andean builders worked together in sillar, the soft white volcanic stone. Behind plain street façades, many houses open onto patios, arched galleries and stone stairways that you cannot see from the pavement.
The best-known public face of that tradition is the Compañía de Jesús church, begun in 1590, with a carved façade completed in 1698 after earthquake damage. Local carvers working the stone added Andean plants, birds and faces to European Baroque forms, a style often called mestizo Baroque. A private walk lets you compare that public example with what survives behind closed doors.
Entry to properties that are not usually open depends on each owner's schedule, so access can vary day to day; your guide confirms what is open. Without a crowd, you can stay in each courtyard long enough to notice the stone-cutting marks and domestic details.
