Inside Santa Catalina's walls the mood is less museum than village. The Dominican monastery was consecrated in 1579 and stayed closed to outsiders for roughly four centuries, opening to the public only in 1970. Its blue and terracotta-red cloister walls, narrow lanes with Spanish street names, and communal kitchens and laundry areas let you read the daily routine of the women who lived there.
The monastery is part of the UNESCO-listed Historic Centre of Arequipa, and its construction shows the same material that gives the city its nickname. The pale volcanic sillar was carved, vaulted and then painted, so you see both the raw stone and the colourful finishes that were applied over it.
Beyond the convent, the colonial core around the Plaza de Armas rewards walking slowly. The city was founded in 1540, and its centre mixes European plans with local stone carving, which a private guide can point out detail by detail rather than at group speed.
